Ingredients

The ingredients are:
  • 2 pounds boneless leg of lamb, trimmed, cut into 1 inch cubes
  • 1 3/4 pounds white potatoes. peeled cut into 1 inch pieces
  • 1 small rutabaga, peeled, cubed
  • 3 large leeks, outer leaves removed, cleaned, white part only, thinly sliced
  • 3 large carrots, peeled, cut into 1 inch pieces
  • 3 stalks celery, thinly sliced
  • 1 medium onion, cut in eighths
  • 2 teaspoons fresh thyme, chopped
  • 1 (14 ounce) can sodium reduced chicken stock
  • Salt and pepper to taste
  • 1/4 cup packed fresh parsley, chopped

How to Make

  • Step 1: Put all the ingredients except parsley into a 6 quart crock pot, stir to mix ingredients, put on the lid, turn on low and cook until the lamb is tender about 6-8 hours

  • Step 2: Spinkle on the parsley just before serving
