Ingredients

The ingredients are:
  • 1 tablespoon canola oil
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 2 tablespoons lime juice (if using a fresh lime, include some of the zest)
  • 2 tablespoons soy sauce
  • 1 (6 ounce) bag baby spinach
  • 5 to 6 pineapple rings, cut into chunks
  • 1 (2 ounce) package slivered almonds, toasted

How to Make

  • Step 1: Combine oils, honey, lime juice and soy sauce. Thoroughly whisk and set aside.

  • Step 2: Toss spinach, pineapple chunks, and almonds in salad bowl. Add dressing and toss again to coat. Garnish with additional almonds (or as I did, fresh chives, the first this year from my herb garden!)
