Ingredients

The ingredients are:
  • 1 unbaked (9 inch) pie crust
  • 2 large eggs (lightly beaten)
  • 3//4 cup milk
  • 3/4 cup half and half (or 18% table cream -- or can use 1 1/2 cups full-fat milk)
  • 1 cup granulated sugar (if you have a sweet tooth add in another few tablespoons sugar)
  • 3 tablespoons all-purpose flour
  • 3 tablespoons melted butter
  • 1/8 teaspoon salt
  • 1 teaspoon coconut extract (DO NOT OMIT!)
  • 1 teaspoon pure vanilla extract
  • 1 package (200 gram) sweetened flaked coconut

How to Make

  • Step 1: Preheat oven to 350 degrees F. Set oven rack to bottom position. Fit pastry into pie plate; flute ends as desired.

  • Step 2: In a medium bowl whisk eggs with next 8 ingredients until well combined (about 20 seconds). Mix in coconut. Pour into pie shell.

  • Step 3: Place the pie plate onto a baking sheet.Bake for 40-50 minutes or until a knife inserted near the center comes out clean. Cool to room temperature. Refrigerate any leftovers.
