Step 1: Preheat oven to 375. Boil peeled and cubed sweet potatoes, until tender, about 12 minutes. Drain.
Step 2: Combine the Half and Half, and next 4 ingredients in a large bowl, stirring with a whisk.
Step 3: Add potato to egg mixture, beat with a mixer at med. speed until smooth.
Step 4: Spoon potato mixture into a 9x13 inch baking dish coated with cooking spray.
Step 5: Combine flour and sugar in a food processor, and pulse to combine.
Step 6: Add chilled butter, and pulse until mixture resembles coarse meal.
Step 7: Stir in pecans, and sprinkle over potato mixture.
Step 8: Cover, and bake at 375 degrees F, for 15 minutes.
Step 9: Uncover, and bake an additional 25 minutes, or until the topping is browned, and the potatoes are thoroughly heated.
