Ingredients

The ingredients are:
  • 6 cups baking potatoes, peeled, and cubed
  • 1 1/2 cups shiitake mushrooms, sliced
  • 12 garlic cloves, halved
  • 1 bay leaves
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 teaspoons extra virgin olive oil

How to Make

  • Step 1: Combine the first 4 ingredients in a Dutch oven. Cover with water, and bring to a boil.

  • Step 2: Cover, reduce heat, and simmer for 20 minutes, or until tender. Drain, reserving 1 cup cooking liquid.

  • Step 3: Discard bay leaf.

  • Step 4: Combine potato mixture, reserved cooking liquid, salt and pepper in a bowl.

  • Step 5: Using a mixer beat at med. speed, until smooth.

  • Step 6: Drizzle oil over potatoes.
