Step 1: Saute onion and zucchini in olive oil until slightly soft. Add undrained tomatoes, bacon pieces, oregano, salt & pepper. Simmer uncovered until liquid reduces.
Step 2: Cook pasta according to package directions. Drain and reserve some of the pasta water. Add pasta to skillet along with some of the cooking water if needed. Simmer briefly to combine all flavors.
Step 3: Plate and top with cheese and/or additional bacon if desired.
