Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1/2 medium red onion, chopped
  • 1 medium zucchini, cut in half moon slices
  • 1 (15 ounce) can fire-roasted tomatoes, undrained
  • 1/4 cup real bacon pieces
  • 1/2 teaspoon dried oregano
  • Salt & pepper to taste
  • 1/2 cup uncooked rotini
  • Shredded cheese for garnish (I used cheddar jack)

How to Make

  • Step 1: Saute onion and zucchini in olive oil until slightly soft. Add undrained tomatoes, bacon pieces, oregano, salt & pepper. Simmer uncovered until liquid reduces.

  • Step 2: Cook pasta according to package directions. Drain and reserve some of the pasta water. Add pasta to skillet along with some of the cooking water if needed. Simmer briefly to combine all flavors.

  • Step 3: Plate and top with cheese and/or additional bacon if desired.
