Ingredients

The ingredients are:
  • 2 1/2 to 3 pounds pork loin (or 2 tenderloins about 1-1 /4 pounds each)
  • 1 (10 ounce) can Campbells Cream of Mushroom soup (I use the low fat/low salt)
  • 1 large onion, cut in half and thin sliced
  • 1 1/2 cups sliced white (button) mushrooms
  • 1 cup white wine
  • 3/4 cup chicken broth
  • 1 can diced tomatoes, do NOT drain
  • 1 bay leaf
  • 2 sprigs of thyme (or 1 teaspoon dried)
  • 1 tablespoon fresh parsley, fine chopped
  • 1/2 teaspoon salt
  • 1 teaspoon pepper

How to Make

  • Step 1: Pork ... Remove the pork from the refrigerator to take the chill off. Season the pork well with salt and pepper on both sides.

  • Step 2: Vegetables and Sauce ... Add the onion to the bottom of the crock pot; and top with the seasoned pork.

  • Step 3: To a medium size bowl, add the soup, tomatoes, broth and white wine. I add the wine to the empty soup can to get any leftover soup out. Mix well and pour over the pork. Finish by adding the bay leaves, thyme, and mushrooms around the pork.

  • Step 4: Cook ... Now, remember all crock pots are different. The first time I used tenderloins and cooked them for 7 hours and they turned out perfect. The second time I made this recipe, I used a pork loin which I preferred, but being a larger cut, I knew the cooking time would be longer. I cooked it for 9 hours and it was perfectly done. I could still slice it, but it was very tender. So depending on your crock pot; it should take between 8-10 hours on low if using a pork loin. Note: About 6 hours in, I took the lid off and spooned some of the sauce over the pork; it isn't necessary

  • Step 5: Finish ... One the pork is done, remove to a serving platter and cover with foil to let it rest. Transfer the sauce from the crock pot to serving bowl so everyone can help themselves and garnish with the fresh parsley. The sauce is creamy from the soup, but has nice flavors from the tomatoes, onions, and mushrooms. As I mentioned, serve with buttered noodles, mashed potatoes or rice to enjoy all that good sauce. Slice the pork and ENJOY! A salad or some roasted green beans would be a perfect side dish.
