Ingredients

The ingredients are:
  • 4 (8-10 inch) spinach wraps
  • 3/4 pound cooked shrimp, rough chopped
  • 1/2 cup cucumber, peeled and lightly seeded, fine diced
  • 1 (4 ounce) can water chestnuts, fine diced
  • 3 tablespoons pimentos, minced
  • 1/4 cup shredded carrots
  • 4 tablespoons hoison sauce
  • 4 tablespoons cilantro, fine minced
  • Optiional --- 2 scallions, fine chopped (white and green parts)

How to Make

  • Step 1: Cucumber ... If you have a seedless cucumber, that works great; but if not, just lightly seed a regular cucumber using a spoon. Then, after they have been peeled, seeded and diced, set them on a paper towel to get any excess water out.

  • Step 2: Shrimp ... You can buy shrimp precooked from your seafood counter, or you can even use the salad shrimp right from the freezer section. They are very small, but will work if that is all that is available. I try to buy what ever shrimp is on sale, steam them myself, peel and then rough chop. Use whatever is available.

  • Step 3: Filling ... Add the diced shrimp, along with the water chestnuts, pimentos, carrots, cucumber and cilantro to a small bowl and toss to combine. Add the optional scallions if you want.

  • Step 4: Wraps ... Spread the hoison on each wrap, leaving 1/2" around the edge. Add the filling and roll up tightly. Wrap in saran wrap. Refrigerate at least 30 minutes up to 2 hours; then slice and ENJOY! You can cut them in half or 3-4 pieces each. Just depends on how you plan to serve them.
