Ingredients

The ingredients are:
  • 4 large portobello mushrooms
  • Extra virgin olive oil
  • 1 pound spinach leaves
  • 2 tablespoon oil (olive oil)
  • 1/2 cup red onion, diced (cut into 3/8 inch dice)
  • 1 tablespoon garlic, minced
  • 1 teaspoons salt, or to taste
  • 2 teaspoons ground nutmeg
  • 2 tablespoons balsamic vinegar
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon Parmesan cheese, grated

How to Make

  • Step 1: Remove the stems and scrape the gills from the mushrooms.

  • Step 2: Blanch the spinach in boiling water for 1 minute, then drain and press dry. Roughly dice the spinach. Set aside.

  • Step 3: In a large saucepan on low heat, saute the onion and minced garlic for 2 minutes, in 2 tablespoons of olive oil.

  • Step 4: Add the spinach.

  • Step 5: Season with the salt and nutmeg.

  • Step 6: Sprinkle with the balsamic vinegar, and toss well.

  • Step 7: Remove the saucepan from the heat.

  • Step 8: Fold in the Mozzarella cheese.

  • Step 9: Stuff the mushroom caps with this mixture. Place caps on a baking sheet.

  • Step 10: Sprinkle each cap with the Parmesan cheese.

  • Step 11: Bake at 400 degrees, for 12-15 minutes.
