Step 1: Combine the flour mixture ingredients, and mix well.
Step 2: Combine the water and eggs together to make the egg wash.
Step 3: Dip the chicken pieces in the egg wash, then dredge them in the flour mixture.
Step 4: Place on a lightly oiled baking sheet, and lightly drizzle the tops with a little more olive oil.
Step 5: Preheat oven to 375 degrees F. Bake the wings for 45-50 minutes, or the chicken pieces for about 25-30 minutes, flipping the chicken half way through the cooking time.
Step 6: In a small bowl, mix the sauce ingredients together (soy sauce through ginger), then set aside.
Step 7: While the chicken is baking, prepare the caramel sauce. Over medium heat, in a medium-size saucepan, boil the sugar and water together. Don’t walk away while making it, as it gets very hot, and can burn easily, so pay careful attention while cooking it. Boil watching carefully until the caramel starts to turn a light amber color and you begin to smell the caramel.
Step 8: When it reaches this stage, give the other sauce ingredients in the bowl a quick stir, to make sure the corn starch is dissolved, then add it all at once to the hot caramel. Stir.
Step 9: Be careful at this stage because this sauce can foam up considerably for a few seconds, and it is very hot. Simmer for only few minutes, then remove from the heat, and allow to cool down slightly.
Step 10: Toss the sauce with the cooked wings or chicken pieces.
Step 11: Serve with your favorite rice and veggies.
