Step 1: Make a pocket in each bread slice by cutting in half horizontally, leaving about 1 inch uncut.
Step 2: Combine cream cheese and jam.
Step 3: Spread about 2 tablespoons of the mixture into each bread pocket.
Step 4: Place slices in two 9 inch x 13 inch pans.
Step 5: Whisk together eggs, milk, and almond and vanilla extracts.
Step 6: Pour an equal amount of egg mixture into each pan.
Step 7: Turn slices over, cover and refrigerate overnight.
Step 8: Spray a 10 inch by 15 inch baking pan with cooking spray.
Step 9: Place bread slices in pan; bake at 375 degrees Fahrenheit for 15 minutes; turn slices over and bake until golden brown, about 10 minutes longer.
Step 10: Sift icing sugar over French toast and sprinkle with maple syrup.
