  • 1 can (15 ounce) black beans (drained and rinsed - or 2 cups cooked black beans, rinsed)
  • 1 cup whole kernel corn (frozen)
  • 1 cup salsa
  • 2 cups cooked brown rice

How to Make

  • Step 1: Mix together the chili powder, cumin, pepper, and salt in a small bowl. Rub the chicken breasts with the spice mix. In a skillet, warm the oil. Brown the chicken on both sides in the oil. Stir in beans, corn, and salsa. Cover and cook for another 10-15 minutes, or until the chicken is cooked through.
