Ingredients

The ingredients are:
  • 1 cup brown rice, cooked
  • 1 tablespoon oil
  • 1/2 large onion, chopped
  • 4 large cloves garlic, finely minced
  • 1/2 medium red pepper, chopped
  • 1/2 green pepper, chopped
  • 1 jalapeno pepper, finely chopped
  • 1 small eggplant, cubed (about 3 cups)
  • 1 small zucchini, cubed
  • 1/2 pound fresh tomatoes, chopped
  • 1/4 cup black olives, sliced
  • 1/2 teaspoon saffron
  • Salt and pepper to taste

How to Make

  • Step 1: Saute the onions over medium heat in the oil until they are translucent about 5 minutes

  • Step 2: Add the garlic, peppers, eggplant, zucchini, saffron, salt and pepper saute for about 5 minutes

  • Step 3: Gently add the tomatoes and olives, stir together

  • Step 4: Transfer to a lightly oiled oven proof dish, cover and bake in a 350f oven for about 20 minutes or until heated through
