  • 1 1/2 pounds sweet potatoes (peeled and cut into 1/2-inch cubes)
  • 1 pound Brussels sprouts (halved, 3 cups)
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 garlic cloves, minced
  • 1 red onion (large onion, cut into 10 wedges)

How to Make

  • Step 1: Preheat oven to 450F; spray a broiler pan with cooking spray.

  • Step 4: Bake for 35-40 minutes, turning once, until vegetables are tender and browned.
