Step 1: Heat milk, sugar and vanilla until just simmering, over medium heat. Cover and reduce heat to simmer to keep warm.
Step 2: Melt butter in a pot over medium heat. Add rice and cook, stirring often until lightly toasted, about 2 minutes.
Step 3: Add orange zest and juice and cook stirring constantly, until absorbed, about 2 minutes.
Step 4: Add about 1 cup of milk mixture and simmer, vigorously stirring often, until almost all has been absorbed, 3 - 5 minutes.
Step 5: Repeat the above step until all of the milk mixture has been absorbed. The rice will be thick and creamy in about 30 minutes total time.
Step 6: Remove from the heat and stir in the coconut milk and set aside for 5 minutes.
Step 7: Spoon chopped strawberries into the bottom of the serving bowls, top with risotto, garnish with sliced strawberries and serve
Step 8: Note: Lefovers are delicious served cold!
