Step 2: Combine icing sugar with 2nd packet of icing sugar and set aside.
Step 3: Blend first four ingredients together in a large bowl.
Step 4: Cut butter into small pieces over flour/almond mixture.
Step 5: Using clean hands, quickly work all ingredients together until you have a smooth dough.
Step 6: Shape dough into pencil-sized ribbons and cut into 2-inch pieces.
Step 7: Place on prepared baking sheet and bend into crescent shapes.
Step 8: Bake for 15 to 20 minutes or until cookies are a light golden colour.
Step 9: Roll warm cookies in reserved icing sugar/vanilla sugar mixture.
