Step 1: Soak oats in 3/4 cup buttermilk for at least 10 minutes.
Step 2: In a separate bowl wisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
Step 3: After the oats have soaked stir the egg, butter, brown sugar, and remaining milk into the oats. Do not overmix.
Step 4: Heat griddle over medium heat until hot. Spray with non-stick cooking oil or brush with butter.
Step 5: Pour 1/3 cup batter onto hot griddle and cook until bubble appear and underside is brown, about one minute. Flip and cook otherside until golden brown
