Ingredients

The ingredients are:
  • 3/4 cup quick-cooking oats (I've used regular oats, just let them soak allittle longer)
  • 1 1/2 cups plus 2 tablespoons well-shaken buttermilk, divided
  • 3/4 cup whole-wheat flour (90 grams)
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon grated nutmeg
  • 1/2 teaspoon salt
  • 1 large egg, lightly beaten
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon packed brown sugar

How to Make

  • Step 1: Soak oats in 3/4 cup buttermilk for at least 10 minutes.

  • Step 2: In a separate bowl wisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.

  • Step 3: After the oats have soaked stir the egg, butter, brown sugar, and remaining milk into the oats. Do not overmix.

  • Step 4: Heat griddle over medium heat until hot. Spray with non-stick cooking oil or brush with butter.

  • Step 5: Pour 1/3 cup batter onto hot griddle and cook until bubble appear and underside is brown, about one minute. Flip and cook otherside until golden brown
