Step 1: In a skillet cook the ground beef with onion until browned (adding in garlic and taco seasoning mix the last 2 minutes of cooking time). Season with salt and pepper.
Step 2: Mix in the remaining ingredients. Transfer to a greased 11 x 7-inch baking dish. Bake in a preheated 400 degree F oven (bottom oven rack) for 30 to 40 minutes.
Step 3: Sprinkle the remaining 1 cup cheddar cheese on top and allow to melt.
