  • 1 1/2 cups self-rising flour
  • 2/3 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1/2 cup milk
  • 1/3 cup oil
  • 1 cup ripe bananas, chopped (2 medium)
  • 1 cup ripe pears, peeled and chopped (1 large)

How to Make

  • Step 1: Preheat the oven to 325F. Coat a 9-inch loaf pan with nonstick cooking spray.

  • Step 2: In a large mixing bowl, combine the flour, sugar, cinnamon and soda.

  • Step 3: In a separate bowl whisk together the eggs, milk and oil.

  • Step 4: Fold egg mixture into the flour mixture and mix until well combined (don’t beat). Gently stir in the fruit.

  • Step 5: Pour batter into prepared pan and bake for 45-50 minutes or until golden and cooked through. Cool in pan on wire rack for 10 minutes. Remove from pan and cool another 10 minutes before slicing.
