Step 1: Preheat the oven to 325F. Coat a 9-inch loaf pan with nonstick cooking spray.
Step 2: In a large mixing bowl, combine the flour, sugar, cinnamon and soda.
Step 3: In a separate bowl whisk together the eggs, milk and oil.
Step 4: Fold egg mixture into the flour mixture and mix until well combined (don’t beat). Gently stir in the fruit.
Step 5: Pour batter into prepared pan and bake for 45-50 minutes or until golden and cooked through. Cool in pan on wire rack for 10 minutes. Remove from pan and cool another 10 minutes before slicing.
