Ingredients

The ingredients are:
  • 1/2 cup butter (unsalted butter, softened)
  • 4 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • 2 large bananas, mashed (very ripe)
  • 1/2 cup walnuts, chopped
  • 1/2 teaspoon vanilla
  • 1/4 cup walnuts (=6 walnut halves for garnish, optional)

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Line a 6 cup jumbo muffin pan with paper liners; set aside.

  • Step 3: In a mixing bowl, using an electric mixer beat the butter and cream cheese at medium speed until creamy.

  • Step 4: Add in the sugar and beat until light and creamy,then beat in the egg just until blended.

  • Step 5: Add the flour, baking powder, baking soda and salt; mix at low speed just until blended.

  • Step 6: Stir in the mashed bananas, chopped walnuts and vanilla.

  • Step 7: Spoon the batter equally into the prepared paper lined muffin pan.

  • Step 8: Optional: Add walnut halves to top of batter for garnish, if desired.

  • Step 9: Bake for 25-30 minutes or until a wooden toothpick inserted in the center comes out clean.

  • Step 10: Cool muffins in the pan about 5 minutes before removing to a wire rack.
