Ingredients

The ingredients are:
  • 3 cups plain mashed potatoes, no butter or milk (you can make them yourself, or use one of the frozen mashed potatoes)
  • 2 (10 ounce) packages frozen chopped spinach, thawed and drained
  • 4 ounces feta cheese, crumbled
  • 6 ounces cream cheese, softened
  • 1/4 cup plain Greek yogurt (any plain yogurt will work, but Greek does make a difference)
  • 1/2 can evaporated milk
  • 1 large or extra large egg, beaten
  • 1 tablespoon butter
  • 1/4 cup kalamata olives, pitted and chopped
  • 1 small garlic clove, minced
  • 2 teaspoons fresh lemon juice
  • 1/4 cup dried Italian bread crumbs
  • 1 tablespoon Greek seasoning
  • Pinch red pepper flakes
  • Salt and pepper to taste

How to Make

  • Step 1: Potatoes ... Whether you make them from scratch, or you use one of the frozen potatoes, such as Ore Ida. You will need 3 cups of mashed potatoes (just the potato). Add the potatoes to a medium size bowl and add the milk, butter, garlic, and pinch of both salt and pepper and mix well. Make sure the potatoes are seasoned well. Then, add the potatoes to a 9x9 pan sprayed with a non-stick spray such as Pam. Press them down as this will be your base for the casserole. Sprinkle with the bread crumbs.

  • Step 2: Spinach ... Rinse out the bowl you made the potatoes in; then add the cream cheese, yogurt, egg, and lemon juice and mix well. Then, add the spinach (make sure it is squeezed dry) and break it up as you add it to the bowl. Also add the Greek seasoning, red pepper flakes, and olives. Once again, mix well to combine. Season with salt and pepper if necessary.

  • Step 3: Casserole ... Spread the spinach and cheese mixture over the potatoes and bread crumbs. Again, press down the spinach. Then top with the feta cheese.

  • Step 4: Bake ... Put the casserole on the middle shelf in a 350 degree preheated oven. Bake approximately 30 minutes until golden brown and the spinach and potatoes are both set.

  • Step 5: Serve ... Let it rest 5 minutes before serving. Cut into squares and ENJOY! Goes perfect with roasted chicken or lamb chops. This can easily be made ahead and then baked right before serving.
