  • The following recipe serves 8 people.

Ingredients

The ingredients are:
  • 2 cans (15.5 ounce each) cannellini beans (white kidney beans or black beans or garbanzo beans, drained and rinsed cooked lentils work too)
  • 1/2 to 1 cup cilantro or flat-leaf parsely, chopped (I usually use at least 1 full bunch)
  • DRESSING --- depending on how many additions you add, you may need to increase amounts
  • 1/4 cup fresh lemon juice (please only use fresh!)
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 1 to 2 cloves garlic, minced
  • 1/2 to 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 to 1/2 teaspoon ground cayenne pepper or tabasco sauce or hungarian hot paprika or red pepper flakes (optional)
  • OPTIONAL ADDITIONS
  • Red onion, diced or green onions, sliced
  • Whole grape or cherry tomatoes or roma tomatoes, seeded and diced
  • Carrot, peeled and grated
  • Celery, diced
  • Bell peppers, seeded and diced (assorted)
  • Jalapeno pepper, seeded and minced or sliced pickled jalapenos
  • Pickled vegetables, chopped
  • Corn
  • Pitted olives, whole or sliced (I use green or kalamata)
  • Capers
  • Avocado, cubed
  • Cabbage, shredded (green or purple)
  • Feta cheese, cubed
  • Halloumi cheese, cubed and pan-fried
  • Jack cheese or pepper jack cheese, cubed
  • Cheddar cheese, cubed
  • Cream cheese, cubed
  • Canned tuna
  • Cooked chicken breast, cubed or shredded
  • Lettuce, to serve (You can serve the bean salad over lettuce or wrapped in lettuce leaves, if desired)

How to Make

  • Step 1: Toss beans, cilantro or parsley, and your additions together. *Most recently, I used 3 cans of cannellini beans, 1 cup cilantro, double the dressing (which was more than enough), and the following additions: 3 carrots, 1 red bell pepper, 1 small red onion, grape tomatoes, whole small green pimento stuffed olives and cubed feta cheese. Yummo!

  • Step 2: Whisk dressing ingredients together.

  • Step 3: Stir dressing into bean mix. Can serve right away, or let sit for the flavors to meld more.

  • Step 4: Serve and enjoy! You can also serve this atop or wrapped in lettuce leaves.
