Step 1: Preheat oven to 375 degrees F (bottom oven rack). Grease a 13 x 9-inch or a 1 1/2-quart baking dish. In a large skillet saute the broccoli, mushrooms and onions in butter until tender. Add ham; heat through. Remove from the heat and keep warm.
Step 2: In a bowl whisk or beat the eggs with water, Dijon mustard, Italian seasoning, seasoned salt and pepper until foamy. Stir in 1 1/2 cups cheddar cheese and the warm broccoli mixture.
Step 3: Pour into a greased baking dish. Bake for 22-27 minutes or until a knife inserted in the center comes out clean. Top with remaining 1/2 cup cheddar cheese and allow to melt.
