Ingredients

The ingredients are:
  • 2 cups fresh broccoli florets
  • 1 cup sliced fresh mushrooms
  • 1/3 cup chopped yellow onion
  • 2 tablespoons butter
  • 1 cup cubed ham (fully cooked ham)
  • 8 large eggs
  • 1/4 cup water (do not use milk)
  • 3 tablespoons Dijon mustard
  • Pinch dry Italian seasoning, rubbed (about 1/8 teaspoon)
  • 1/4 teaspoon seasoned salt
  • 1/4 teaspoon fresh ground black pepper, or to taste
  • 1/4 teaspoon garlic powder
  • 2 cups low-fat shredded cheddar cheese, divided (can use more)
  • 1 medium ripe firm tomato, chopped

How to Make

  • Step 1: Preheat oven to 375 degrees F (bottom oven rack). Grease a 13 x 9-inch or a 1 1/2-quart baking dish. In a large skillet saute the broccoli, mushrooms and onions in butter until tender. Add ham; heat through. Remove from the heat and keep warm.

  • Step 2: In a bowl whisk or beat the eggs with water, Dijon mustard, Italian seasoning, seasoned salt and pepper until foamy. Stir in 1 1/2 cups cheddar cheese and the warm broccoli mixture.

  • Step 3: Pour into a greased baking dish. Bake for 22-27 minutes or until a knife inserted in the center comes out clean. Top with remaining 1/2 cup cheddar cheese and allow to melt.
