Ingredients

The ingredients are:
  • 4 red bell peppers (orange, yellow or green)
  • 1 teaspoon butter
  • 1 pound ground meat (beef, pork, veal mixture)
  • 20 ounces marinara sauce
  • 1 cup cooked rice (I use Uncle Ben's Long Grain & Wild Rice)
  • 1/2 teaspoon cayenne pepper (optional)

How to Make

  • Step 1: Pre-heat oven to 375 degrees F

  • Step 2: Remove tops and seed of peppers (reserve pepper-tops). Cook in boiling water for about 4-5 minutes; drain.

  • Step 3: Brown meat mixture in skillet.

  • Step 4: Add 10 ounces of marinara sauce with ground meat and rice; mix well.

  • Step 5: Spoon mixture into peppers. Top with pepper-tops.

  • Step 6: Smear butter onto bottom and sides of square baking dish.

  • Step 7: Add peppers with tops to baking dish and bake for 30-minutes.

  • Step 8: Heat remaining marinara sauce to serve over peppers.
