Step 1: Almonds ... Add the almonds to a dry saute pan and bring to medium high heat. Toast for 1-2 minutes until you can smell the almonds, and they become lightly golden brown. Keep an eye on them as they go very quick. Remove from the heat to cool.
Step 2: Rice ... You can really use any type of rice you want - long grain, jasmine, basmati, quick cooking, rice in a bag, even brown rice; but I really find that long grain works best for this, as it has time to soak up the flavor of the wine and orange juice as it cooks. But again, use what works best for you.
Step 3: Add the wine and reserved liquid from the mandarin oranges to a measuring cup. Fill with water to bring it up to the amount required to cook the rice. This will vary depending on the type of rice and the cooking method you use. Cook the rice according to package directions.
Step 4: Finish ... The last minute of cooking, add in the oranges, cilantro and toasted almonds just to heat through. Season with salt and pepper. Serve and ENJOY!
