  • 2 tablespoons oil
  • 1 1/2 cups yellow onion, diced
  • 1 tablespoon garlic, smashed
  • 1 tablespoon ginger, fresh, smashed
  • 4 teaspoons red curry paste
  • 1 serrano chile, ribs and seeds removed, minced
  • 1 pound sweet potatoes, peeled, cubed (1/2-inch pieces)
  • 3 cups water
  • 1 cup coconut milk
  • 1 cup crunchy peanut butter
  • 15 ounces white beans (1 can)
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper, ground
  • 1/4 cup cilantro, fresh, minced
  • 2 tablespoons lime juice

How to Make

  • Step 1: Heat oil and cook onions until translucent

  • Step 2: Stir in garlic, ginger, curry paste, beans and serrano pepper, cook, stirring, for 1 minute.

  • Step 3: Stir in sweet potatoes, peanut butter and water and bring to a boil.

  • Step 4: Reduce heat to medium-low and simmer, partially covered, until the sweet potatoes are soft, 30 minutes.
