Ingredients

The ingredients are:
  • 2 cups cauliflower florets
  • 3 carrots, small, pared and cut in 2" chunks
  • 1 green bell pepper, small, seeded and cut in 2" chunks
  • 1 red bell pepper, small, seeded and cut in 2" chunks
  • 6 white button mushrooms, large-ish, quartered
  • 4 tablespoons butter (unsalted)
  • 1 tablespoon olive oil
  • 1 tablespoon Lawry's Tuscan seasoning*
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon salt
  • Pinch black pepper

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Place all veggies in a large baking dish that has been sprayed with non-stick cooking spray.

  • Step 3: In a small saucepan, melt butter and add all the herbs, spices and garlic. Let simmer on low heat 3 minutes.

  • Step 4: Then pour over the veggies and mix well with a spoon or your hands.

  • Step 5: Place in preheated oven for about 45 minutes.

  • Step 6: *If you can't find Lawry's Tuscan seasoning, just mix these ingredients and use 1 tablespoon for your recipe. Then store the rest in an airtight container.

  • Step 7: 1 cup finely chopped sun-dried tomatoes (not packed in oil)

  • Step 8: 1 tablespoon dried Italian herbs

  • Step 9: 1 tablespoon dried basil

  • Step 10: 1 tablespoon semi coarse sea salt

  • Step 11: 1 tablespoon red pepper flakes
