The ingredients are:
  • 1 1/2 cups yellow cornmeal
  • 1/2 cup all purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 2 eggs
  • 14 ounces creamed corn (1 can)
  • 1/2 cup sour cream
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 jalapeno pepper, seeded and minced
  • 1 cup green onion, white and green parts chopped
  • 8 ounces Colby jack cheese, shredded

How to Make

  • Step 1: Preheat oven to 350ºF. Grease 13x9 baking pan or 12-inch cast iron skillet.

  • Step 2: Combine cornmeal, flour, baking powder and salt; stir to combine.

  • Step 3: In a large bowl, combine eggs, creamed corn, sour cream milk and oil. Mix well and add dry mixture, jalapeños, onions and cheese.

  • Step 4: Pour into greased pan or skillet. Bake for 55-70 minutes until golden brown or set in center. Let rest in pan to cool slightly before serving. (The cast iron will cook quicker)
