  • 1 1/2 pounds red potatoes, halved
  • 1 tablespoon kosher salt
  • 6 cups water, boiling
  • Salad
  • 2 Persian cucumbers, grated, drained, wrung out
  • 1/2 cup dill pickles, chopped
  • 1/4 cup dill, fresh, minced
  • 1/2 cup red onion, diced
  • 2 garlic cloves, smashed
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon black pepper, freshly ground
  • 6 ounces Greek yogurt, whole, plain
  • 2 tablespoons mayonnaise

How to Make

  • Step 1: In large pot, cover potatoes with water and season heavily with salt.

  • Step 2: Bring water to a boil and cook until potatoes until easily pierced with a knife, 20 minutes.

  • Step 3: Meanwhile, in a large bowl, stir together all remaining ingredients.

  • Step 4: When potatoes are cooked, drain well and add to bowl while hot.

  • Step 5: Fold into dressing until well combined and let cool.

  • Step 6: Season to taste.
