Step 1: In large pot, cover potatoes with water and season heavily with salt.
Step 2: Bring water to a boil and cook until potatoes until easily pierced with a knife, 20 minutes.
Step 3: Meanwhile, in a large bowl, stir together all remaining ingredients.
Step 4: When potatoes are cooked, drain well and add to bowl while hot.
Step 5: Fold into dressing until well combined and let cool.
Step 6: Season to taste.
