Step 1: Brush a baking sheet with oil. Place/combine the flour with dry mustard powder in a shallow bowl. Place the eggs in another shallow dish, and in a third shallow dish combine the breadcrumbs with cornflake crumbs, cayenne and seasoned salt.
Step 2: Lightly coat each piece of fish in flour, shaking off any excess. Dip into egg then coat in breadcrumb mixture.
Step 3: Arrange the coated fish on oiled baking sheet. Bake in a preheated 425 degree F oven (bottom oven rack) 7-8 minutes, turn fish over and bake another 7 minutes or until flakey and cooked through (baking time will depend on the thickness of the fish).
