Ingredients

The ingredients are:
  • 1 1/2 pounds Atlantic cod fish, cut into serving-size pieces, then pat dry with paper towels
  • 1/2 cup all-purpose flour
  • 2 teaspoons dry mustard powder
  • 2 large eggs, beaten
  • 1/4 cup dry breadcrumbs
  • 3/4 cup cornflake crumbs
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon seasoned salt

How to Make

  • Step 1: Brush a baking sheet with oil. Place/combine the flour with dry mustard powder in a shallow bowl. Place the eggs in another shallow dish, and in a third shallow dish combine the breadcrumbs with cornflake crumbs, cayenne and seasoned salt.

  • Step 2: Lightly coat each piece of fish in flour, shaking off any excess. Dip into egg then coat in breadcrumb mixture.

  • Step 3: Arrange the coated fish on oiled baking sheet. Bake in a preheated 425 degree F oven (bottom oven rack) 7-8 minutes, turn fish over and bake another 7 minutes or until flakey and cooked through (baking time will depend on the thickness of the fish).
