  • 3/4 cup Bisquick baking mix, original
  • 3/4 cup cornmeal mix, white, self-rising
  • 2 tablespoons sugar
  • 1/2 cup cornmeal, yellow
  • 1 cup buttermilk
  • 2 eggs
  • 2 tablespoons vegetable oil, or bacon drippings
  • Pan
  • 2 tablespoons oil
  • Real maple or maple-flavored syrup

How to Make

  • Step 1: In large bowl, whisk together Bisquick mix, sugar, cornmeal mix and cornmeal with whisk.

  • Step 2: Add buttermilk, eggs, and 2 tablespoons oil.

  • Step 3: Stir with whisk just until blended.

  • Step 4: Let stand 5 minutes.

  • Step 5: Meanwhile, heat griddle or skillet over medium-low heat (325°F).

  • Step 6: Brush with oil, add more oil as needed after each pancake during cooking.

  • Step 7: For each pancake: pour 1/4 cup batter onto hot griddle.

  • Step 8: Cook 3 to 5 minutes or until bubbles form on top. Turn

  • Step 9: Cook other side until golden brown.

  • Step 10: Serve with real maple or maple-flavored syrup.
