Ingredients

The ingredients are:
  • 1 pound cabbage mix from a bag, shredded
  • 1/2 cup celery, diced
  • 1/2 cup onion, diced
  • 1/2 cup red pepper, diced
  • 15 1/2 ounces kidney beans, white or red, drained
  • 3 tablespoon cider or herbal vinegar
  • 1/2 cup mayonnaise (or more if necessary)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon sugar
  • 1 teaspoon dried herb of choice (parsley, Italian, oregano, etc.)
  • 2 ounces bacon, crisply fried and crumbled or 2 tablespoons real bacon bits

How to Make

  • Step 1: Place cole slaw mix into large bowl. Add chopped veggies and beans.

  • Step 2: In a smaller bowl mix the vinegar, mayo, salt, pepper, sugar and herbs.

  • Step 3: Fold dressing ingredients and half the bacon into slaw until well coated. If it seems a little dry, add a little extra mayo and/or vinegar.

  • Step 4: Sprinkle remaining bacon over top.

  • Step 5: You can let flavors blend in the fridge for a while or just serve immediately.
