  • 1 1/2 cups brown sugar
  • 2/3 cup oil (canola oil)
  • 1 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups rhubarb (chopped into small pieces)

How to Make

  • Step 5: Bake for 1 hour, cooling 10 minutes before removing from pan.
