Step 1: In a bowl combine the first 4 ingredients (-lemon peel) and let stand for 30 minutes. Stir in the olive oil, the chopped mint and soy sauce whisking to blend. Season to taste with pepper.
Step 2: On a platter arrange the melon slices and then top them with the celery slices, green onions and radishes. Drizzle the vinegar over all and then sprinkle with the sliced mint. Season with salt and pepper. Drizzle with extra olive oil.
