Ingredients

The ingredients are:
  • 4 chicken breasts, boneless, skinless
  • 3 bell peppers
  • 1 red onion
  • 2 tablespoons olive oil
  • 1 ounce fajita seasoning (1 package)
  • 8 flour tortillas
  • Optional toppings: Guacamole, sour cream, shredded cheese, cilantro, salsa, queso fresco, lime wedges.

How to Make

  • Step 1: Preheat the oven to 400 degrees F.

  • Step 2: Slice up the chicken, peppers, and onion into strips.

  • Step 3: Put the strips into a large ziplock bag and add the olive oil and fajita seasoning. Shake the bag to fully coat all of the ingredients.

  • Step 4: Arrange the seasoned chicken and veggie strips onto a baking sheet in a single layer.

  • Step 5: Bake for 20-25 minutes.

  • Step 6: Optional: turn on the broiler and crisp it up just a bit - approximately 2-3 minutes. (Just watch it so it doesn't burn or get overcooked.)

  • Step 7: Warm up the tortillas by putting a stack of them into the microwave wrapped in a wet paper towel for about 30 seconds.

  • Step 8: Serve the fajitas with the warm tortillas and any toppings you'd like to add.
