Ingredients

The ingredients are:
  • 2 pounds pork chops (8)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons flour
  • 2 tablespoons butter
  • 3 tablespoons olive oil
  • 1/2 cup onion, diced
  • 1/4 cup celery, sliced
  • 1 garlic clove, smashed
  • 6 ounces tomato paste (1 can)
  • 28 ounces crushed tomatoes (1 can)
  • 1/4 teaspoon oregano, dried
  • 1/4 teaspoon thyme, dried
  • 1/2 teaspoon parsley, dried
  • 1 teaspoon sugar
  • 1/2 cup red wine
  • 2 ounces parmesan cheese, grated

How to Make

  • Step 1: Season chops, and lightly sprinkle with the flour.

  • Step 2: Heat oil and butter in dutch oven, brown chops on both sides and remove.

  • Step 3: Add onions and celery and cook until translucent.

  • Step 4: Add garlic, tomato paste, tomatoes, sugar and herbs.

  • Step 5: Simmer for15 minutes covered, (I would go 30 minutes, adding water as needed).

  • Step 6: Add wine and simmer for 15 minutes more until chops are tender.

  • Step 7: Season to taste.

  • Step 8: Add cheese at very end.
