Step 1: Season chops, and lightly sprinkle with the flour.
Step 2: Heat oil and butter in dutch oven, brown chops on both sides and remove.
Step 3: Add onions and celery and cook until translucent.
Step 4: Add garlic, tomato paste, tomatoes, sugar and herbs.
Step 5: Simmer for15 minutes covered, (I would go 30 minutes, adding water as needed).
Step 6: Add wine and simmer for 15 minutes more until chops are tender.
Step 7: Season to taste.
Step 8: Add cheese at very end.
