Ingredients

The ingredients are:
  • 2 tablespoons butter
  • 1 onion, medium, diced
  • 4 cups chicken stock, good quality
  • 4 - 5 pounds rotisserie chicken, deboned, skin discarded (1 chicken)
  • 32 ounces fire roasted tomatoes, diced (2 cans)
  • 10 ounces corn, frozen (1 package)
  • 10 ounces lima beans, frozen (1 package)
  • 4 ounces Worcestershire sauce (I'm questioning if this amount is accurate, maybe it's supposed to be 4 tablespoons(??)
  • 2 tablespoons balsamic vinegar
  • 4 ounces Coca Cola
  • 8 ounces ketchup (1 small bottle)
  • 5 ounces bbq sauce, prepared, use your favorite brand

How to Make

  • Step 1: Cut or shred chicken to bitesize pieces; set aside.

  • Step 2: In a large soup pot, over medium-high heat, melt butter, add onion and saute until translucent and slightly golden. Add chicken stock, chicken pieces, and remaining ingredients. Stir well. Bring to a boil, reduce heat to to a low simmer and cook for 4 - 5 hours (these seems like a high number to me, I'm thinking maybe a 2 - 3 hours would suffice (??). If stew gets too thick while it's cooking, add additional chicken stock as it cooks to desired consistency. Taste for seasoning.
