  • 1/4 teaspoon pepper
  • 28 ounces tomatoes, crushed (1 can)
  • 15 ounces kidney beans, undrained (1 can)
  • 1/2 teaspoon cumin, ground
  • 2 cups zucchini, diced
  • 2 cups corn, frozen
  • Garnish
  • 1 tablespoon cilantro

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Cook pasta in heavily salted boiling water until al dente, drain.

  • Step 3: Meanwhile, in stock pot, heat the oil.

  • Step 4: Add the onions and jalapenos, and season lightly.

  • Step 5: Cook until translucent.

  • Step 6: Add garlic and the rest of the ingredients.

  • Step 7: Simmer until pasta is done.

  • Step 8: Add pasta and season to taste, and mix in cilantro.

  • Step 9: Pour into greased 9x13 casserole.

  • Step 10: Bake covered for 30 minutes until hot and bubbly.
