  • 1 pound pinto beans, dry
  • 6 cups water
  • Base
  • 1/2 pound onion, roughly chopped
  • 6 garlic cloves, roughly chopped
  • 1 tablespoon oil
  • Spices
  • 1 teaspoon oregano, dried
  • 1/2 teaspoon chipotle chili powder, dried
  • 1 teaspoon cumin, dried
  • 3 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Citrus
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice

How to Make

  • Step 1: Soak the beans in water that covers them, adding more water as needed.

  • Step 2: Bring beans to boil.

  • Step 3: Turn off and cover for 1 hour.

  • Step 4: Simmer with spices except chili powder.

  • Step 5: Heat the garlic and onions until translucent

  • Step 6: Add chili powder

  • Step 7: Add to beans

  • Step 8: Add everything to taste,

  • Step 9: Adding water as needed; it's going to have strong flavor.

  • Step 10: Bring to boil.

  • Step 11: Reduce to simmer and cover for a couple hours or until tender.

  • Step 12: Remove lid to reduce to desired consistency. They are thick, don't burn them at this point.

  • Step 13: Remove bay leaves.

  • Step 14: Salt and pepper to taste.

  • Step 15: Add citrus juices to taste.
