Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 3-4 ounces spinach, roughly chopped
  • Kosher salt and pepper, to taste
  • 2 cups leftover cooked grains (quinoa, brown rice, couscous, etc)
  • 1/2 cup avocado, chopped
  • 1/4 cup green onion, chopped, white and green parts
  • 1 cup grape tomatoes, halved
  • 4 ounces salmon, cooked (optional)
  • 2 tablespoons balsamic vinegar (or other flavored vinegar of choice)

How to Make

  • Step 1: Heat oil in a large pan and add garlic and saute for 1 minute.

  • Step 2: Add the spinach, some salt and pepper and toss for a couple minutes until spinach is somewhat wilted.

  • Step 3: Fluff up the grain and divide between 2 bowls.

  • Step 4: Top with spinach, avocado, onions, tomato and salmon.

  • Step 5: Drizzle with a little extra olive oil or some balsamic vinegar.
