Step 1: Heat oil in a large pan and add garlic and saute for 1 minute.
Step 2: Add the spinach, some salt and pepper and toss for a couple minutes until spinach is somewhat wilted.
Step 3: Fluff up the grain and divide between 2 bowls.
Step 4: Top with spinach, avocado, onions, tomato and salmon.
Step 5: Drizzle with a little extra olive oil or some balsamic vinegar.
