Ingredients

The ingredients are:
  • 6 boneless skinless chicken breasts (can use bone in skin-on cooking time will need to be increased)
  • Fresh ground black pepper (do not season the chicken with any salt)
  • Oil, for browning chicken
  • 2 cans (10 3/4 ounces each) condensed golden mushroom soup, undiluted (or condensed cream of mushroom soup, undiluted)
  • 1/4 cup Parmesan cheese, grated (or to taste)
  • 1/8 teaspoon cayenne pepper, to to taste
  • 1/4 cup half and half (optional, use for a thinner sauce)
  • 1 small yellow onion, finely chopped
  • 1 to 2 garlic cloves, minced (or 1 teaspoon garlic powder)
  • 1 can (10 ounce) sliced mushrooms, drained (or use fresh sauteed)
  • 1 cup cheddar cheese, grated (optional or to taste)

How to Make

  • Step 1: Preheat oven to 350 degrees F. Butter a 13 x 9-inch baking dish. Heat oil in a skillet over medium-high heat (use enough oil to coat the bottom of your skillet).

  • Step 2: Season the chicken with black pepper. Brown on both sides in hot oil (about 3 minutes per side). Place the browned chicken in the baking dish.

  • Step 3: In a bowl combine both soups with all remaining ingredients except the cheddar cheese, until well blended, then pour over the chicken (lifting and turning the chicken to coat in the sauce).

  • Step 4: Cover and bake for about 45 minutes (cooking time will vary depending on the thickness of your chicken breasts). Uncover and bake for another 15 minutes.

  • Step 5: At the end of cooking sprinkle with grated cheddar cheese and return to oven for a few minutes to melt the cheese (the cheddar cheese is only optional).
