Ingredients

The ingredients are:
  • 12 ounces wild rice, cooked (1 1/2 cups)
  • 8 ounces bacon, minced
  • 1 cup onions, minced
  • 1 cup celery, diced
  • 1/3 cup green bell peppers, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 32 ounces chicken broth (1 carton)
  • 1 tablespoon parsley flakes, dried
  • 22 ounces cream of mushroom soup (1 can)
  • 4 ounces mushrooms sliced undrained (1 can)
  • 12 ounces minced clams, undrained (1 can)
  • 16 ounces light cream, 1/2 & 1/2 (1 container)

How to Make

  • Step 1: Fry bacon in a large stockpot, and remove.

  • Step 2: Leave 3 tablespoons bacon grease in the pot.

  • Step 3: Saute onions, celery and peppers and season lightly.

  • Step 4: Cook until translucent.

  • Step 5: Add wild rice, mushroom soup and parsley; rinse out can with chicken broth.

  • Step 6: Add mushrooms and simmer for 30 minutes.

  • Step 7: Add clams and 1/2 & 1/2 cream, don't boil, just heat.

  • Step 8: Add bacon.
