  • 4 ounces Monterey jack cheese, cubed
  • 2 radishes, chopped
  • 2 tomatoes, chopped
  • 2 celery ribs, diced
  • 1/2 cup onion, chopped
  • 1/4 cup vegetable oil
  • 3 tablespoons white wine vinegar
  • 3/4 teaspoon ground cumin, to taste
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Cook lima beans in microwave for 2 minutes.

  • Step 2: In a large bowl, combine corn, beans, cheese, radishes, tomatoes, celery and onion.

  • Step 4: Season to taste.

  • Step 5: Refrigerate for 2 to 3 hours before serving.
