Ingredients

The ingredients are:
  • 1 English muffin, whole grain, split in halves
  • 2 teaspoons butter
  • 1 teaspoon hot pepper jelly
  • 1 large egg
  • 1 slice ham, deli, coarsely diced
  • 4 tablespoons shredded cheese (I use gruyere)

How to Make

  • Step 1: Pop muffin halves in toaster to brown.

  • Step 2: Spread each half with butter and spread the bottom half with jelly, as well.

  • Step 3: Break your egg into a 1-pint glass pyrex measuring cup and stir it enough with a fork or tiny whisk to break the yolk.

  • Step 4: Sprinkle the ham pieces on top and microwave for 30 seconds on high, then sprinkle cheese over top and microwave 20 seconds more to melt the cheese.

  • Step 5: Use a butter knife or tiny spatula to loosen and lift the egg from the measuring cup. Place it on the muffin half that has the jelly and cover with the other half.
