  • 4 eggs, hard-boiled
  • 8 ounces ham, cubed
  • 1 1/2 cups bread crumbs
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 10 ounces cream of mushroom soup (1 can)
  • 4 ounces light cream
  • 1/4 teaspoon paprika
  • 1 teaspoon parsley flakes, dried

How to Make

  • Step 1: Preheat oven to 375°F.

  • Step 2: Whisk light cream with soup, rinsing out can with milk.

  • Step 3: Peel eggs, divide white and yolk then coarsely chop whites.

  • Step 4: Chop yolks.

  • Step 5: Chop cooked ham into 1/4-1/2 inch cubes.

  • Step 6: In a skillet, melt 1 tablespoon butter and sauté crumbs, stirring until coated, for 3-4 minutes.

  • Step 7: In a buttered casserole or shallow baking dish, sprinkle egg whites then ham then yolks in alternating layers, sprinkling each layer with buttered crumbs and sauce until the dish is full, with a final layer of crumbs on top.

  • Step 8: Sprinkle with a pinch of parsley and paprika for a nice top color.

  • Step 9: Place casserole in hot oven, reduce heat to 350°F and bake for 25 minutes.
