Step 1: Bring a large saucepan of heavily salted water to a boil.
Step 2: Meanwhile, grate potato finely.
Step 3: Drain off brown liquid.
Step 4: Add salt and flour to make stiff dough.
Step 5: In a medium bowl, mix together grated potato, flour, milk, salt, and pepper until a thick paste forms.
Step 6: Dip a teaspoon in the boiling water, then dip a teaspoon in the dumpling mixture picking up half a teaspoon or so–and slide it into the gently boiling water.
Step 7: Drop into boiling salted water from wet spoon. Dumplings should be about 1 1/2 inches long and 1/2 inch in diameter when cooked.
Step 8: Continue until all the dumpling dough is gone.
Step 9: Simmer covered about 20 minutes or until dumplings taste done.
Step 10: They are done as soon as they float to the top.
Step 11: Drain in a colander.
