Ingredients

The ingredients are:
  • 7 ounces white rice, dry, short grain (1 cup)
  • 3 tablespoons olive oil
  • 1/2 cup vermicelli, dry
  • 1/2 teaspoon coriander, ground
  • 1/2 teaspoon cardamom, ground
  • 1 teaspoon mint, dried
  • 1/2 teaspoon cinnamon
  • 1 teaspoon garlic, minced
  • 2 cups vegetable stock
  • 3/4 teaspoon salt, to taste
  • 1/4 cup onions, chopped
  • 1 tablespoon parsley, fresh, minced

How to Make

  • Step 1: Heat oil, cook onion until caramelized and remove.

  • Step 2: Add orzo and brown.

  • Step 3: Add garlic, spices and rice and cook until opaque.

  • Step 4: Add stock, herbs, onions and parsley.

  • Step 5: Cover and simmer for 20 minutes.

  • Step 6: Take off heat and leave covered for 5 minutes.

  • Step 7: Season to taste.
