  • 2 cups flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt (I would cut this down a bit)
  • 1/2 teaspoon baking soda
  • 1/4 cup butter
  • 1 egg, beaten
  • 1 teaspoon orange peel/zest, grated
  • 3/4 cups orange juice
  • 1 1/2 cups raisins (golden if possible)
  • 1 1/2 cups cranberries, fresh or frozen, chopped

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Sift dry ingredients together.

  • Step 3: Cut in butter until crumbly.

  • Step 4: Add egg, orange juice and zest and stir until evenly moistened.

  • Step 5: Fold in raisins and cranberries.

  • Step 6: Spoon mixture into 9 inch loaf pan.

  • Step 7: Bake for 1 hour and 10 minutes, or until toothpick inserted in center comes out clean.
