Step 1: Preheat oven to 375 degrees.
Step 2: In a small cast iron skillet over medium heat, melt butter.
Step 3: In a medium-sized bowl, mix cornbread mix, eggs and cottage cheese
Step 4: Pour into small heated cast iron skillet or an 8 x8 pan.
Step 5: Bake for 25 minutes, until cornbread is slightly browned on top.
