Step 1: On medium high heat in a pot of boiling salted water add the potatoes and cook for 10 minutes or until done; drain and add some butter to the potatoes.
Step 2: In a bowl combine the next 5 ingredients (-oregano) plus some salt and pepper; pour dressing over the potatoes and then add the sliced mint along with the onion slices.
Step 3: Place in a serving dish, draining off the excess liquid and scatter mint over the top of the potatoes and toss.
