Ingredients

The ingredients are:
  • 2 1/4 pounds new potatoes (1 kg)
  • Butter
  • 1/4 cup olive oil (60 ml)
  • 1 tablespoon cider vinegar
  • 1/4 lemon, juice only
  • 2 garlic cloves, crushed
  • Dried oregano
  • Mint leaves
  • 1/2 red onion, sliced
  • Salt
  • Pepper

How to Make

  • Step 1: On medium high heat in a pot of boiling salted water add the potatoes and cook for 10 minutes or until done; drain and add some butter to the potatoes.

  • Step 2: In a bowl combine the next 5 ingredients (-oregano) plus some salt and pepper; pour dressing over the potatoes and then add the sliced mint along with the onion slices.

  • Step 3: Place in a serving dish, draining off the excess liquid and scatter mint over the top of the potatoes and toss.
